Spinach And Feta Grilled Cheese

Ingredients:

2 slices of bread

1 tbsp butter

1 cup fresh spinach

2 oz feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup sun-dried tomatoes, chopped (optional)

Black pepper to taste

Instructions:

In a skillet, heat 1/2 tablespoon of butter over medium heat until melted.

Add the red onion slices to the skillet and sauté for 2-3 minutes until they start to soften.

Add the fresh spinach to the skillet and cook until wilted, stirring occasionally. This should take about 2-3 minutes.

Remove the spinach and onion from the skillet and set them aside.

On one slice of bread, spread the remaining butter. Place the bread, butter-side down, in the skillet over medium heat.

Quickly assemble the sandwich by layering half of the feta cheese, followed by the sautéed spinach and onion mixture, sun-dried tomatoes (if using), and the remaining feta cheese.

Top with the second slice of bread, pressing down gently.

Cook the sandwich for 2-3 minutes on each side or until the bread is golden brown and the cheese is melted.

Remove from the skillet, let it cool for a minute, then slice and serve.

Sprinkle with black pepper to taste and enjoy this delightful Spinach and Feta Grilled Cheese!
