Ingredients:

  • 1 package frozen puff pastry (2 sheets), thawed
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and well-drained
  • 1 cup ricotta cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1 large egg (for egg wash)
  • Sesame seeds or poppy seeds (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
    • Add the minced garlic and cook for another minute.
    • Stir in the well-drained spinach and cook for another 2-3 minutes, until any excess moisture evaporates. Remove from heat and let cool slightly.
    • In a large bowl, combine the spinach mixture, ricotta cheese, feta cheese, Parmesan cheese, lightly beaten egg, salt, pepper, and nutmeg (if using). Mix well.
  3. Prepare the Pastry:
    • On a lightly floured surface, roll out one sheet of puff pastry to smooth out any creases. Cut into 4 equal squares.
    • Place a generous spoonful of the spinach mixture in the center of each square.
    • Fold each square into a triangle, sealing the edges by pressing with a fork. Repeat with the second sheet of puff pastry.
  4. Egg Wash:
    • In a small bowl, beat the remaining egg with a tablespoon of water to make an egg wash.
    • Brush the tops of the pastries with the egg wash.
    • If desired, sprinkle with sesame seeds or poppy seeds.
  5. Bake:
    • Transfer the pastries to the prepared baking sheet.
    • Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed.
