Instructions:

  1. Prepare crust: Preheat oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper. Combine graham cracker crumbs, sugar, and melted butter. Press into pan and bake for 10 minutes. Let cool.
  2. Prepare cheesecake layer: Beat cream cheese until smooth. Add sugar and eggs one at a time, then vanilla and sour cream. Gently fold in chopped strawberries. Pour over cooled crust.
  3. Bake cheesecake: Bake for 35-40 minutes or until set. Let cool completely, then refrigerate for at least 2 hours.
  4. Prepare chocolate ganache: Heat heavy cream until simmering. Pour over chocolate chips and let sit for 2-3 minutes. Stir until smooth. Let cool slightly.
  5. Assemble: Pour ganache over chilled cheesecake. Refrigerate for 30 minutes. Cut into bars and serve.
