Tomato, goat’s cheese and honey tart

1 ready puff pastry (round or rectangular)
150 g goat’s cheese (whole or already crumbled)
2-3 tomatoes, cut into thin slices
Honey to season
Fresh thyme or basil (optional)
Salt and pepper

Pre-prepare the oven and prepare the dough:
Preheat the oven following the instructions on the puff pastry package.
Arrange the dough:

Roll out the puff pastry on a baking tray covered with baking paper. If necessary, cut the dough into the desired shape.
Prepare the filling:
Distribute the tomato slices evenly over the dough.
Crumble the goat cheese over the tomatoes.
Seasoning and cooking:
Season the cake with a little salt and pepper to taste.
Pour honey generously all over the tart.

Optional: Sprinkle a few thyme or basil leaves on top.
Lightly brush everything with olive oil.
Cook:
Bake the tart in the preheated oven following the instructions for puff pastry, usually at around 180-200°C (depending on the manufacturer) for 15-20 minutes or until the pastry is golden and crisp.
Serve:
Allow the cake to cool slightly before cutting it into pieces. Serve hot as an appetizer or second course.
