Instructions:

  1. Preparation:
    • Dice the onion and mince the garlic.
    • Shred the cheddar cheese if not already shredded.
    • Wash the baby spinach and dice the tomatoes.
  2. Cooking:
    • In a large sauté pan, melt the butter over medium heat.
    • Add the diced onion and minced garlic to the pan and cook for 2 to 3 minutes until the onion is tender.
    • Crack the eggs into the pan and season with salt and pepper. Cook for 3 to 4 minutes, stirring frequently, until the eggs are softly scrambled.
