Vanilla Cupcakes

Ingredients
200g margarine,
200g castor sugar,
5 eggs,
3 cups cake flour,
3 tsp baking powder,
vanilla essence
and a cup of buttermilk

Method
Sift the flour and baking powder together and set aside.
Mix the sugar and margarine until light and fluffy,
add eggs one at a time while mixing.
Add the four mixture and continue mixing.
Add the buttermilk and vanilla essence and mix.
Place in cupcake tray lined with casings and bake in a preheated oven (150°c) until golden brown .
