Winter White Bean and Italian Sausage Soup
This was DELICIOUS! So hearty and flavorful…my son doesn’t even like soup but he LOVED this!
Very good. Yes, much like italian wedding soup without the little pasta.
This is a really good, hearty soup. Perfect on those cold, wintry days! And what’s even better is that it’s so, so quick to make.
I threw in fresh spinach because I had it.

What do you need to make Winter White Bean and Italian Sausage Soup
1 tbsp vegetable oil
1 onion, finely chopped
1 carrot, finely chopped
2 cloves garlic, finely chopped
10 oz sweet Italian sausage meat
3 cups chicken broth
1 cup passata
2 cups cannellini beans
2 cups spinach
salt, to taste
black pepper, to taste
How to make Winter White Bean and Italian Sausage Soup
FIRST STEP:
Place a saucepan on medium heat and add the vegetable oil.
Then add the onion and carrot, cook for 5 minutes to soften.
SECOND STEP:
Stir the chopped garlic into the saucepan and cook for 1 minute.
Next add the Italian sausage meat to the saucepan, sauté for 5 minutes until well browned.

THIRD STEP:
Pour the chicken brown and pasta into the saucepan, bring the soup to a simmer and cook for 10 minutes.
Then stir in the cannelloni beans and spinach, warm through in the soup for 10 minutes.

FOURTH STEP:
Season the winter white bean and Italian sausage soup with salt and black pepper
Stir well.
Serve immediately whilst hot.
