Ingredients:

Ingredient Quantity
Sturdy bread (sourdough recommended) 8 slices
Sharp cheddar cheese, grated 2 cups
Cream cheese, softened 1/2 cup
Mayonnaise 1/3 cup
Pimientos, drained and chopped 1 (4 oz) jar
Unsalted butter, room temperature 2 tablespoons
Garlic powder 1/2 teaspoon
Salt and pepper To taste
Hot sauce or cayenne pepper (optional) A dash

Instructions:

  1. In a bowl, combine the grated cheddar cheese, softened cream cheese, mayonnaise, chopped pimentos, garlic powder, salt, and pepper. For an extra kick, add a dash of hot sauce or cayenne pepper.
  2. Spread a thin layer of room temperature butter on one side of each bread slice.
  3. Place four slices of bread, butter-side down, on a clean surface. Generously spread the prepared pimento cheese mixture on the unbuttered side.
  4. Top each with the remaining bread slices, butter-side facing up.
  5. Heat a large skillet or griddle over medium heat. Carefully add the sandwiches and cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
  6. Slice your sandwiches diagonally and serve immediately. Enjoy the cheesy goodness!
