ZUCCHINI PARMESAN CRISP

Ingredients:

  • 2 medium-sized zucchinis

  • Instructions:
    1. Preheat your oven to 425°F (220°C). Grease a baking sheet with olive oil or use a silicone baking mat.
    2. In a shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, dried basil, salt, and pepper. This mixture will be used to coat the zucchini slices.
    3. In another shallow bowl, beat the eggs.
    4. Slice the zucchinis into 1/4-inch thick rounds. You can choose to leave the skin on or peel the zucchinis, depending on your preference.
    5. Take each zucchini slice and dip it into the beaten eggs, ensuring it’s well-coated.
    6. Next, coat the zucchini slice with the breadcrumb and Parmesan mixture, pressing down gently to make sure it adheres.
