Zucchini Patties

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Total Time: 30 minutes
Yield: Approximately 10-12 patties

Ingredients:

  • 2 medium-sized zucchini, grated
  • 1 teaspoon salt
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (use almond flour for a low-carb option)
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 large eggs, beaten
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup olive oil for cooking
  • Greek yogurt or sour cream for serving (optional)

Instructions:

  1. Grate Zucchini:
    • Grate the zucchini using a box grater. Place the grated zucchini in a bowl and sprinkle with salt. Allow it to sit for about 10 minutes to draw out excess moisture.
  2. Drain and Squeeze Zucchini:
    • After 10 minutes, place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
  3. Prepare Zucchini Mixture:
    • In a large bowl, combine the drained zucchini, grated Parmesan cheese, breadcrumbs (or almond flour), minced garlic, chopped parsley, beaten eggs, feta cheese (if using), black pepper, and paprika. Mix until well combined.
  4. Shape into Patties:
    • Form the zucchini mixture into small patties, about 2-3 inches in diameter.
  5. Cook the Patties:
    • Heat olive oil in a large skillet over medium heat. Place the zucchini patties in the skillet, leaving space between each. Cook for 3-4 minutes on each side or until golden brown.
  6. Drain on Paper Towels:
    • Once the patties are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.
  7. Serve Warm:
    • Serve the Zucchini Patties warm. Optionally, garnish with additional fresh parsley and serve with Greek yogurt or sour cream on the side.

Recipe Tips:

  • Customize the flavor by adding your favorite herbs or spices to the zucchini mixture, such as dill, chives, or red pepper flakes.
  • Experiment with different cheeses like cheddar or mozzarella for varied taste and texture.
  • For a crispier exterior, you can coat the patties with a thin layer of almond flour before cooking.

These Zucchini Patties make a delightful and healthy side dish or appetizer. Enjoy the crispiness and savory goodness of these patties that highlight the natural flavors of zucchini!
