FRESH BLUEBERRY CHEESECAKE

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8-ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream
  • 1/2 cup heavy cream

For the Blueberry Topping:

  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons cornstarch

Instructions:

For the Crust:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with the butter.
  3. Press the crumb mixture into the bottom of the prepared springform pan to form an even crust.
  4. Bake the crust in the preheated oven for 10 minutes. Remove it and let it cool while you prepare the filling.
