Slow Cooker Garlic Parmesan Chicken

This is my favorite garlic parmesan chicken! Making slow cooker garlic parmesan chicken could not be simpler, try out this easy dinner recipe today!

Ingredients

  • 3 lbs. boneless skinless chicken breasts
  • 1 cup chicken broth
  • 2 tsp Italian seasoning divided use
  • 2 sticks (1 cup) salted butter softened
  • 1 cup mayonnaise
  • 1 cup shredded Parmesan cheese
  • 2 tbsp minced garlic
  • Salt and pepper to taste

Instructions

  1. Spray slow cooker insert with cooking oil spray
  2. In a small bowl, combine the softened butter, mayonnaise, minced garlic, 1 tsp. Italian seasoning and a dash of salt and pepper. Stir to combine. Mix in the Parmesan cheese.
  3. Place the chicken breasts into the bottom of the slow cooker. Pour one cup of chicken broth over the chicken. Season with 1 teaspoon of the Italian seasoning and salt and pepper. Cover and cook on high for 3 hours (or low for at least 6 hours).
  4. Open the slow cooker and drain the excess broth and fat from cooked chicken.
  5. Scoop and smooth the butter/seasoning mixture on top of the cooked chicken. Cover and cook on high for an additional 30 minutes, or until sauce is creamy and cheese is melted.
  6. Serve over egg noodles or rice.

What kind of chicken should I use for this recipe?

You can use whatever cut of chicken is on sale or whatever you have on hand. I usually have both boneless skinless thighs and breasts on hand, breasts work great as you’ll see but other cuts of chicken work great too.

The parmesan and garlic flavors come together nicely on pretty much any poultry cut so feel free to mix it up with whatever works for you!

This recipe doesn’t use anything fancy or outlandish. It’s a garlic parmesan chicken that comes together with simple ingredients you might already have on hand.

You will need about 3 pounds of chicken. I usually use breasts or thighs that are boneless and skinless. Other items you will need are chicken broth, Italian seasoning, salted butter, mayonnaise, parmesan cheese, garlic, and salt and pepper to taste.
