Chili Rellenos Casserole

Ingredients:

  • 8 large poblano peppers
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 oz (225g) Monterey Jack cheese, shredded
  • 8 oz (225g) cheddar cheese, shredded
  • 6 large eggs
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • Optional toppings: salsa, sour cream, chopped cilantro

Instructions:

  1. Prepare Poblano Peppers: Preheat the broiler in your oven. Place the poblano peppers on a baking sheet and broil, turning occasionally, until the skins are blistered and charred on all sides, about 5-7 minutes. Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with a clean kitchen towel and let the peppers steam for 10 minutes. Once cooled, peel off the skins, remove the seeds and membranes, and slice the peppers into strips.
  2. Prepare Filling: In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, and cook until softened, about 3-4 minutes. Add drained diced tomatoes, ground cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and set aside.
  3. Assemble Casserole: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish. Spread half of the sliced poblano peppers in the bottom of the baking dish. Sprinkle half of the shredded Monterey Jack and cheddar cheese over the peppers. Spread the tomato mixture evenly over the cheese layer. Top with the remaining sliced poblano peppers and shredded cheese.
  4. Prepare Egg Mixture: In a mixing bowl, whisk together eggs, milk, and flour until smooth. Pour the egg mixture evenly over the layers in the baking dish.
  5. Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the eggs are set.
  6. Serve: Remove the casserole from the oven and let it cool for a few minutes before slicing. Serve hot with your favorite toppings such as salsa, sour cream, or chopped cilantro.
