Ingredients:

For the Topping:

  • 1/4 cup (1/2 stick) unsalted butter
  • 3/4 cup packed light brown sugar
  • 1 can (20 ounces) pineapple slices in juice, drained (reserve the juice)
  • Maraschino cherries, as desired

For the Cake:

  • 1 1/3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsalted butter, softened
  • 1 cup pineapple juice (from the canned pineapple)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

2. Make the Topping:

  • In a small saucepan, melt 1/4 cup of unsalted butter over low heat. Once melted, pour it into the bottom of the greased cake pan.
  • Sprinkle the packed brown sugar evenly over the melted butter.
  • Arrange the drained pineapple slices over the brown sugar. Place maraschino cherries in the center of each pineapple slice and in any gaps.

3. Prepare the Cake Batter:

  • In a separate bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  • Add the softened 1/3 cup of butter, pineapple juice, egg, and vanilla extract to the dry ingredients. Mix until well combined.

4. Pour the Cake Batter:

  • Carefully pour the cake batter over the arranged pineapple slices and cherries in the cake pan.

5. Bake:

  • Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

6. Cool and Invert:

  • Let the cake cool in the pan for a few minutes. Then, place a serving plate upside down over the cake pan and, holding both the plate and pan, carefully invert them so that the cake comes out onto the plate. Be cautious as the topping will still be hot.

7. Serve:

  • Serve your pineapple upside-down cake warm or at room temperature.

This pineapple upside-down cake is a delightful dessert with a sweet and fruity topping and a moist cake. It’s a timeless favorite that’s perfect for any occasion. Enjoy!
