Ingredients:
For the Meatloaf:
- 2 pounds ground beef
- 1 onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 1/2 cup quick oats or breadcrumbs
- 2 large eggs
- 1 1/2 cups tomato juice or tomato sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the Meatloaf Topping:
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1/4 teaspoon yellow mustard
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, finely chopped onion, finely chopped green bell pepper, oats or breadcrumbs, eggs, 1 cup of tomato juice or tomato sauce, salt, black pepper, and garlic powder. Mix until all the ingredients are well combined.
- Form the meat mixture into a loaf shape and place it in a baking dish.
- In a separate bowl, combine the remaining 1/2 cup of tomato juice or tomato sauce, ketchup, brown sugar, and yellow mustard. Mix until the sauce is smooth.

- Bake the meatloaf in the preheated oven for about 45 minutes.
- After 45 minutes, pour the remaining sauce over the meatloaf and continue baking for an additional 15-20 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
- Once the meatloaf is done, remove it from the oven and let it rest for a few minutes before slicing.
