Cracker Barrel Meatloaf

Ingredients:

For the Meatloaf:

  • 2 pounds ground beef
  • 1 onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1/2 cup quick oats or breadcrumbs
  • 2 large eggs
  • 1 1/2 cups tomato juice or tomato sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

For the Meatloaf Topping:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 teaspoon yellow mustard

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, finely chopped onion, finely chopped green bell pepper, oats or breadcrumbs, eggs, 1 cup of tomato juice or tomato sauce, salt, black pepper, and garlic powder. Mix until all the ingredients are well combined.
  3. Form the meat mixture into a loaf shape and place it in a baking dish.
  4. In a separate bowl, combine the remaining 1/2 cup of tomato juice or tomato sauce, ketchup, brown sugar, and yellow mustard. Mix until the sauce is smooth.
  5. Pour half of the sauce mixture over the meatloaf in the baking dish. Spread it evenly.
  6. Bake the meatloaf in the preheated oven for about 45 minutes.
  7. After 45 minutes, pour the remaining sauce over the meatloaf and continue baking for an additional 15-20 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  8. Once the meatloaf is done, remove it from the oven and let it rest for a few minutes before slicing.
