VEGAN LENTIL SOUP

Ingredients:

  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 tablespoon olive oil

  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  • 6 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 2 bay leaves
  • Salt and black pepper to taste
  • Juice of 1 lemon (about 2-3 tablespoons)
  • Fresh parsley or cilantro, chopped, for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground cumin, coriander, turmeric, paprika, and cayenne pepper to the pot. Stir to coat the vegetables with the spices.

  6. Remove and discard the bay leaves.
  7. Stir in the lemon juice to brighten the flavors and adjust the seasoning with more salt and pepper, if needed.
