WALKING TACO CASSEROLE

Walking Taco Casserole is a fun and delicious twist on the classic walking taco dish, perfect for feeding a crowd or enjoying as a family dinner. Here’s a simple recipe for you to try:

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 bag (9 oz) corn chips (such as Fritos)
  • 2 cups shredded Mexican blend cheese
  • Optional toppings: diced tomatoes, sliced jalapeños, diced avocado, sour cream, salsa, chopped cilantro

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the meat is browned and the onion is softened. Drain any excess grease.
  3. Stir in the taco seasoning mix, black beans, corn kernels, and diced tomatoes with green chilies. Cook for an additional 2-3 minutes, stirring occasionally, until heated through.
  4. Spread half of the corn chips in an even layer on the bottom of the prepared baking dish.
  5. Spoon half of the beef and bean mixture over the layer of corn chips.
  6. Sprinkle half of the shredded cheese over the beef and bean mixture.
  7. Repeat the layers with the remaining corn chips, beef and bean mixture, and shredded cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and continue baking for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  10. Remove the casserole from the oven and let it cool for a few minutes before serving.
  11. Serve the Walking Taco Casserole hot, garnished with your favorite toppings such as diced tomatoes, sliced jalapeños, diced avocado, sour cream, salsa, and chopped cilantro.
