Parmesan Roasted Creamy Onions

Of all the ways that you are used to cooking onions, I am sure that this is not one of them. This recipe is perfect to use as a side dish for any main course.

This dish involves roasting onions and then placing them in a creamy parmesan sauce and baking them once again.

Why this is so special is because the onions begin to caramelize  while they are baking. This caramelization brings out the sweetness of the onion.

This recipe might be a new recipe for you however, give it a try and try to convince yourself that you do not like it.

            What type of onion should I use for this side dish?

Any onion that is sweet, will work. I prefer to use the Sweet Vidalia onion. This should be sliced in thin rings, but leave the rings together.

            How long can I keep this side dish in the refrigerator?

Sadly, I cannot fully answer that. I am not lucky enough to have any leftovers after dinner. However, with a cream based sauce, the dish likely will only last 2 or 3 days in the refrigerator.

            Can I freeze this onion dish?

I do not advise that you freeze this dish. The creamy sauce will not be the same when it is thawed.

What do you need to make Parmesan Roasted Creamy Onions

3 large Sweet Onions, such as Vidalia

1 cup heavy cream

¼ cup white wine

½ cup Parmesan Cheese, grated

4 tbsp butter, unsalted

3 tbsp Olive Oil

1 tsp Garlic powder

¼ tsp Cayenne Pepper

Salt and pepper to taste

How to make Parmesan Roasted Creamy Onions

FIRST STEP:

Preheat the oven to 375*

Spread the onions in a 9×13 baking dish keeping the rings all together

Drizzle with Olive Oil and then season with Salt and Pepper to taste

Place the baking dish in the oven and roast for 15 minutes

Remove the onions from the oven and raise the temperature to 450*

SECOND STEP:

In a medium saucepan, combine the heavy cream, wine, butter, garlic powder, and cayenne pepper

Cook until the butter is melted and bubbles begin to form on the outer edge of the pan

Remove the mixture from the heat and carefully pour over the onions

Sprinkle with the grated Parmesan Cheese

Cover with Aluminum foil and place in the oven

THIRD STEP:

Bake for 20 minutes, then remove the foil and cook for an additional 10 minutes

When the onions caramelize and the cheese is golden brown, the dish is done cooking

Remove the dish from the oven and serve hot!
